Healthy Breads
Wholemeal, Multigrain, Indian Pita Breads made with youghurt.
Ingredients
Serves 4
1 Large or 2 Small Tins Tuna in water or Olive Oil
2 Spring Onions - Scallions finely chopped
1/2 Large Cucumber deseeded and diced
2 Tbsp Greek Yoghurt
4 Green Lettuce Leaves
8 Slices Wholemeal or Wholegrain Bread
Preparation
Drain the tuna and put into a medium sized bowl. Break into flakes with a fork.
Add the diced cucumber and spring onion. Mix well to combine.
Mix in the greek yoghurt.
Add a little salt and freshly ground black pepper.
Spread a little greek yogurt on the bread.
Place a lettuce leaf on one side of the bread
Place a good dollop of the tuna mixture on the bread. Top with the second slice of bread, slice in half and eat!
Additional Fillings
Try the following additional fillings.
Sliced tomato, beetroot, red pepper. spinach or celery. Just have fun experimenting with other flavors.
