This soup can be made with any vegetables you may have in your fridge. No need to buy anything special just to make this soup. It’s a great way to use up any veggies.

Healthy Vegetable Soup Recipe
Ingredients
Serves 4
1 medium onion finely chopped
1 leek finely chopped<.li>
1 head of broccoli chopped into florets
2 courgettes cut into small cubes
1 celery stick finely chopped <.li>
1 litre chicken or vegetable stock
small bunch of spinach chopped
2 tbsp coriander finely chopped<.li>
Preparation
Heat the oil in a large pot.
Add the onion and saute for 2 minutes
Add the leek and continue to cook for a few minutes more
Add broccoli, celery and courgetters and saute for 2 minutes.
Stir fry the vegetables to make sure they are all coated with oil.
Pour in the stock, partly cover the pot and simmer on a low heat for 20 minutes or until all vegetables are cooked throug.
Sprinkle in the spinach and coriander. Simmer for 2 minutes to let the flavors combine.
Serve in warm bowls with slices of crusty wholemeal french stick.
