Homemade Healthy Chicken Soup Recipe, packed full of fresh vegetables, lentils and herbs. A real heart warming soup ideal for winter.

Dry Soup Mix
Dry soup mix can be bought in most supermarkets. The packet usually contains barley, lentils and split peas. Some need to be soaked overnight, other soup mixes only require to be soaked for 30 minutes. I try to use the quicker varieties.
You can also get a no soak version which just needs rinsing. Personally I’m not keen on it. You need to use more and it tends to be a bit soggy.
For a quick healthy soup go for the 30 minute soaking time.
Stock
If you use stock cubes to add more flavour, go for low salt and sugar versions. I use more herbs and spices for flavour than relying on too many stock cubes.
There are no hard and fast rules about which vegetables to use. Add more, less or omit to suit you. And experiment with vegetables you like or interested in trying.
Preparing the dry soup mix
Soak the dry soup mix according to the manufactures instructions. Just make sure to rinse the pulses before and after soaking.
Start heating the fresh water in a large deep pot.
The pot I use has a glass lid which is great for checking the contents without taking the lid off all the time. Keeping the lid on most of the time also helps keep all the lovely flavours inside the pot.
Remove and discard all the skin and fat from the chicken
Add the chicken pieces to the pot
Pop the bay leaves into the pot.
Cook the chicken on a low heat until the meat starts to separate from the bones – about 30 minutes.
Meanwhile, finely chop all the vegetables – keeping them separate from each other
When the chicken is cooked remove from the pot with a slotted spoon. place in a large bowl, cover until required later.
Rinse the dry soup mix thoroughly, add to the pot.
Cook until soft. The soup mix swells quite a bit when it’s ready.
Add more hot water if required.
Now add the finely chopped onion and carrots.
Cook until they start to soften, approximately 15 minutes.
Add the leeks and celery.
Simmer for another 10 minutes
When all the vegetables are cooked, add the chopped parsley and coriander. Mix Well
Simmer for 10 minutes to release the flavors of the herbs.
Serve with some crusty wholemeal bread.

Tip
If you can leave the soup overnight in the fridge, all the lovely flavours have time to mature. It makes a huge difference to the taste… delicious!
Leftovers If there’s any leftovers, freeze in portion size containers. So when you fancy a healthy snack, just defrost and reheat. Why not take it to work in a thermos flask.
